Step-by-step cooking
Step 1:
How to make chicken in wine? First, prepare the marinade. If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt and pepper are already present in such mixtures, take this into account, otherwise you risk over-salting and peppering the dish.
Step 2:
In a bowl, combine soy sauce, vegetable oil, liquid honey, garlic passed through a press, chicken seasoning, nutmeg, salt and pepper to taste. Pour all the red wine and mix.
Step 3:
Now prepare the main ingredients. In addition to chicken thighs, you can use any part of the chicken: shanks, fillets, wings. Wash the garlic cloves, dry them and leave them whole without peeling them.
Step 4:
Wash the chicken thighs (or other parts of the chicken), dry, cut in half if necessary.
Step 5:
Pour the wine marinade over the chicken, making sure that most of the chicken is covered with liquid.
Step 6:
Leave the chicken to marinate for one hour at room temperature, and preferably for 8-24 hours in the refrigerator. If you marinate in the refrigerator, then tighten the bowl with chicken with cling film.
Step 7:
Peel the potatoes and cut into large cubes.
Step 8:
Cut the orange into circles.
Step 9:
Cut the red onion into circles too.
Step 10:
Put potatoes in a baking dish in an even layer and lightly salt it.
Step 11:
Remove the chicken thighs from the marinade and spread over the potatoes with the skin up.
Step 12:
Between the pieces of chicken, arrange circles of orange, red onion, sprigs of rosemary or thyme and whole cloves of garlic. If you don't have fresh rosemary and thyme, dry herbs will do.
Step 13:
Cover the mold with foil or a lid and put the chicken in a preheated 180 °C oven for about 1.5 hours. Determine the exact time and temperature of baking according to your oven.
Step 14:
10 minutes before the end of baking, remove the foil, brush the surface of the chicken and onion with a thin layer of liquid honey. Return the chicken to the oven and bake under the grill until golden crisp. Bon appetit!
