Step 1:
How to make khachapuri with egg in the oven? First of all, prepare the necessary products. I have mozzarella and Adyghe cheese. But in the classic Georgian recipe, Imeretian cheese is used, or it is also in half with suluguni.
Step 2:
Take a volumetric bowl, into which then pour three hundred milliliters of warm boiled water, pour out one tablespoon of sugar and seven grams of dry fast-acting yeast.
Step 3:
Add three tablespoons of premium flour from the total amount to a common bowl.
Step 4:
Mix all the ingredients in a bowl until smooth and put it in a warm place to activate the yeast for fifteen minutes.
Step 5:
After the time has elapsed, take a fine sieve and sift three hundred grams of premium wheat flour into a bowl with activated yeast and add one teaspoon of salt to the bowl.
Step 6:
Mix all the ingredients well in a bowl and knead the dough.
Step 7:
Assemble the dough in a bowl with your hands, then add two tablespoons of vegetable oil to the bowl.
Step 8:
Continue to thoroughly knead the dough in the bowl with your hands until the desired consistency for ten minutes, then cover the bowl with a napkin and put it in a warm place for one hour.
Step 9:
After one hour, sprinkle the work surface of the table with a small amount of flour and spread the dough, which then knead well for about two minutes.
Step 10:
Form the kneaded dough and divide into four identical pieces, which in turn roll into buns and cover them with a napkin on top and leave to melt for twenty minutes.
Step 11:
To prepare the filling, put in a deep bowl and knead two hundred grams of Adyghe cheese in it, then take a large grater and rub one hundred and eighty grams of mozzarella cheese into a bowl with Adyghe cheese and mix the cheese together.
Step 12:
Break one chicken egg into a bowl with cheese, then add one hundred and fifty to two hundred milliliters of warm boiled water to it and mix all the ingredients in the bowl well together until smooth.
Step 13:
Lay out each bun of dough alternately on a table sprinkled with a small amount of flour and roll out to tortillas two millimeters thick.
Step 14:
Mix the cooked filling well in the bowl one more time and spread it one tablespoon from each opposite edge of the tortilla.
Step 15:
Wrap the edges of the tortillas with stuffing on each side.
Step 16:
Form a kind of boats from the dough, which then glue the edges well.
Step 17:
Spread the formed blanks on a baking sheet greased with a small amount of vegetable oil, then fill each blank with three tablespoons of filling and put it in a warm place for proofing.
Step 18:
After fifteen minutes, put the baking sheet in a preheated oven to two hundred and twenty degrees and bake the khachapuri for ten minutes.
Step 19:
Remove the baking sheet from the oven after ten minutes and grease the pastry with a beaten chicken egg.
Step 20:
Put one chicken egg and ten grams of butter in each pastry.
Step 21:
Put the baking tray in the oven for another two minutes.

After the time has elapsed, remove the pan with the cooked khachapuri from the oven.
