Cooking method
1. Peel the onion and carrot. Cut the onion into half rings, and grate the carrots on a coarse grater. Mix the onion and carrot.
2. In a small bowl, put sugar, ground coriander and ground black pepper. Mix it up.
3. Cut the fish into large pieces (the carcass into 2-3 parts) and rub with a mixture of spices from the previous step.
4. Wash the tomato and cut it into rings, or half rings, if you have one large tomato.
5. Cut the lemon into half rings and put a slice of lemon in each piece of fish. If there is a fish tail, cut it so that the lemon fits.
6. In a baking dish, put the onion and carrot in an even layer. Place tomato slices around the perimeter, and fish in the center on a vegetable pillow.
7. Grate the cheese on a coarse grater, chop the greens finely. Cover the fish with cheese, and top with herbs. Wrap the mold with foil.
8. Put the mold in the oven, preheated to 180 degrees, for 45-50 minutes. Serve with potatoes or as an independent dish.
