Sausage and Cabbage Soup
A tasty soup for the whole family that comes together quickly and easily. If you're not sure what to feed the kids, this hearty soup with frankfurters is a great option. I used cooked mild frankfurters, but you can swap in any kind your child likes best — smoked sausage, for example. You can also use larger sausages in place of the franks.

Step 1:
Get your ingredients ready. For this tomato soup with cabbage and frankfurters you'll need: water, broth, potatoes, frankfurters, cabbage, tomato paste, garlic, vegetable oil for frying, table vinegar, ground black pepper, and salt.

Slice the frankfurters into rounds.

Peel the potatoes and cut them into medium cubes.

Rinse the cabbage and cut it into small squares.

In the pot you'll cook the soup in, heat the vegetable oil and fry the frankfurters until they're golden and lightly browned.

Pour 1.5 liters (about 6 cups) of hot water into the pot and bring to a boil.

Add the potatoes and cabbage to the pot. Cook for about 15 minutes, until the vegetables are tender.

Stir the tomato paste into the broth. You can use vegetable or meat broth (beef, pork, or poultry).

Pour the tomato-paste broth into the pot with the frankfurters and vegetables. Add the table vinegar.

Add the garlic, pressed through a garlic press. Season the soup with salt and pepper and stir. Cook for another 1–2 minutes, then take it off the heat.

Cover the pot and let the soup rest for 10–12 minutes.

Then ladle the soup into bowls. Enjoy!
- Out of all the sausage soup recipes out there, I like this one because it brings together everything my family loves. The cabbage makes it reminiscent of shchi (Russian cabbage soup), and the frankfurters make it filling. You can add other vegetables, too — bell pepper or carrot. Stir some chopped parsley or dill into the finished soup. When buying frankfurters, check the label: good-quality franks should contain pork, beef, water, eggs (or egg melange), whole or skim milk powder, salt, sugar, and spices (black pepper, allspice, nutmeg, or cardamom). That's it — there shouldn't be any other additives.
