Step 1:
Chop the onion in a blender at the lowest speed. After that, we pass it in a frying pan in olive oil until golden brown.
Step 2:
At this time, peel the garlic and scald the tomatoes cut crosswise. After scalding, fill the tomatoes with cold water and remove the peel.
Step 3:
Garlic is passed through a garlic press and added to the onion along with coarsely chopped tomatoes. We also pour wine into it.
Step 4:
Simmer until the tomatoes are boiled. Mix thoroughly until more or less homogeneous. Due to the addition of white wine, the mixture acquires a bluish-greenish hue.
Step 5:
At this time, we lay out the cod fillet in a form greased with olive oil. It is better to take the form deeper, as there will be a lot of juice. Fillet on top is also lubricated with olive oil.
Step 6:
Spread the cooked onion marinade on top and put it in the oven. I decided to add the greens later so that it would remain fresh and healthy.
Step 7:
Sprinkle the finished dish with parsley.
I put pre-peeled cod fillet in a saucepan greased with olive oil. The fillet itself is also flavored with olive oil on top. And then it's the sauce's turn. Finely chop and fry the onion until golden blush, add coarsely chopped tomato pulp without grains and peel with garlic passed through a garlic press, pour in table wine and boil until the tomatoes turn into tomato mass. I turn off the fire and lightly add the sauce, which I pour over the fish fillet. On top - parsley greens and - in a preheated oven to medium temperature for half an hour - for forty minutes. But you need to watch carefully, in some ovens the food is cooked faster, in others it is slower. I learned about this culinary recipe from an educational program about the traditions of different countries. It was quite a long time ago, and now I cook this dish not only on holidays, but also on weekdays. It is difficult to imagine a lover of fish delicacies, whom a cod fillet in the oven in Portuguese would leave indifferent. I haven't met anyone like that yet.
