I cook them as follows, first the dough. Melt butter, mix it with egg yolks, add one tablespoon of sugar, milk, a little salt, mix everything with a mixer or whisk. I dilute this mixture with flour, mix until smooth and introduce the whipped proteins into the foam.
I mix the resulting mass slowly, lifting the dough from the bottom up. Apples are washed, peeled and cored, cut into even pieces about 0.5 mm thick, sprinkle with sugar, leave them alone for about twenty minutes. Then I pour oil into a frying pan, heat it up and spread the apple slices with a fork, pre-dipping them in the dough. On low heat, fry the apples on both sides until golden brown. When all the apples are fried, I put them in a baking dish and put them in the oven preheated to 180 degrees for literally five minutes. I take out the apples, put them on a dish, sprinkle with powdered sugar. This food is delicious if it is served with sour cream, berry syrup or thin jam.
