Step 1:
To prepare puff envelopes, prepare everything you need. Puff pastry can be prepared by yourself, but it will be faster to buy ready-made. It's no worse, but it saves a lot of time. Remove the dough from the freezer in advance and let it defrost at room temperature. I will use Adyghe cheese. Feta, suluguni, or parmesan is also perfect. When choosing cheese, be guided by your taste.
Step 2:
To prepare the cheese filling, grate the cheese on a coarse grater and add the egg yolk to it. Leave the protein in a separate bowl. It is useful to lubricate the surface of the envelopes before baking. Mix the yolk with the grated cheese.
Step 3:
Roll out the soft puff pastry on the table, lightly sprinkled with flour. Cut the dough into 9 squares, approximately the same size.
Step 4:
Put some cheese filling in the cent of each square. Connect the corners of the dough in the middle and pinch the edges, forming such an envelope.
Step 5:
Cover the baking tray with cooking paper and put all the prepared envelopes on it. Lubricate the surface of the envelopes with the deposited egg white. For lubrication, it is convenient to use a brush.
Step 6:
Sprinkle all the envelopes with sesame seeds on top. Place the baking sheet with the envelopes in the oven, preheated to 190 degrees, for 30 minutes. During the baking time, be guided by your oven. The finished envelopes will become an appetizing golden color and slightly increase in volume.
Step 7:
Remove the envelopes from the oven, cool slightly and serve to the table. They are great for hot, sweet tea. When hot, they instantly fly off the table. Have a nice treat!
Puff pastry can be taken both yeast and yeast-free - in this recipe it does not matter.
In the filling, instead of cheese, you can use minced meat, jam, chocolate.
