Mannikin on kefir without flour

Airy mannikin with vanilla flavor and beautiful decor. This simple and budget dish can be decorated royally so that no one immediately realizes that they are facing an ordinary mannikin. You can use any decor, your imagination will tell you about it. It tastes wonderful: tender and melting in the mouth.     Stir with a spoon and leave the mass for one hour to swell - you can leave it not exactly for an hour, but for 50 minutes.

    In a separate bowl, beat the eggs, add sugar and salt, beat everything well with a mixer. The mass should turn out to be lush, the splendor of the mannikin will depend on it. Beat at high speed for several minutes. It's definitely not possible to get off with a whisk here, so arm yourself with a mixer. At the end of whipping, add vanilla and baking powder. Once again, gently mix with the mixer already turned off.

    Now carefully introduce the egg mass into the swollen semolina, making movements with a spoon from the bottom up. A homogeneous liquid mass is obtained. While we set the dough aside, so that the baking powder will act, and we will take care of the baking dish.

    I have a round split shape with a diameter of 17 cm. I lined the bottom and sides with parchment paper, which I adjusted to size with scissors: I got one circle and two strips wide from the side. Lubricate the paper with melted butter and pour in all our dough with a neat movement.

    We send the workpiece to the oven for 40 minutes. I turned on the oven at a moderate temperature, equal to 160 degrees, so that the mannik had time to bake and not burn. You can additionally check the readiness with a toothpick. During baking, the mannik was well baked and browned. We let it cool down a little and remove it from the mold - it's easier to do this with a split mold.

    Don't forget about the decor - I have powdered sugar, colored coconut chips and raspberries.
