Step 1:
How to bake a mannikin with cottage cheese? Prepare the products. The fat content of sour cream cottage cheese does not matter much, just keep in mind that the calorie content will change. Also choose the amount of sugar to suit your taste.

Divide the eggs into yolks and whites. Try to do this as carefully as possible, the whites should be absolutely clean, even a drop of yolk will not let them beat well.
Step 3:
Take a bowl with egg yolks, add cottage cheese, sugar, sour cream and vanilla sugar.
Step 4:
Mix the products. I punched them with an immersion blender. The mass became absolutely smooth and tender. But even with a simple mixing with a spoon, the result will be good. The only thing I would advise then is to rub the cottage cheese through a sieve to get rid of the grains.
Step 5:
Mix semolina with baking powder. Add it to the curd mass. Stir until smooth.
Step 6:
Whisk the whites with a mixer to steep peaks. It will take about 5 minutes, the proteins should become very thick. This is important because they, along with the baking powder, will be responsible for lifting the dough during baking.
Step 7:
Add the whipped whites to the dough and mix them very gently. Accuracy is important so that the air bubbles that formed when whipping proteins do not burst, they will lift the dough. The finished dough will turn out very tender and fluid.
Step 8:
Take a baking dish. It can be baked in absolutely any, both in shape and material. I have silicone, I don't need to do anything with it. Lubricate molds made of other materials with a small amount of vegetable oil.
Step 9:
Bake the mannikin in the oven at 180 ° C for 45-55 minutes until golden brown.
This is the most delicious mannikin I've ever tasted! Absolutely not dry, with a moist heavy crumb and a curd taste. I really liked it! The top can be poured with icing, chocolate, sprinkle with nuts.
So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
