    How to make a Black Prince cake on kefir? Prepare the necessary ingredients for this. Kefir I use 1.5% fat content, eggs of category C1. Cocoa is natural, without added sugar. Heat the kefir to room temperature.

    To make a sponge cake, combine the eggs with sugar and whisk into a fluffy foam. Then manually, using a whisk, mix the melted butter and kefir.

    Then pour in the sifted flour, cocoa, vanilla and cinnamon. Mix everything into the dough.

    At the end, add soda, slaked with vinegar. In the dough, it will begin to act immediately and the dough will become more airy. The dough with added soda does not need to be stirred for a long time.

    Cover the split baking dish (20 cm) with parchment and put the prepared dough into it. Scroll the mold in any direction so that the dough spreads evenly to the edges. Thanks to this, there will be no bump in the finished biscuit. Place the mold in the oven, preheated to 180 degrees, for 45-60 minutes.

    Remove the finished biscuit from the oven. If a small bump has formed on top, then it can be pressed a little while the biscuit is hot. Remove the form from the biscuit and cool it. Then wrap the biscuit with cling film and put it in the refrigerator overnight.

    The biscuit that has lain down is well cut and crumbles less. Cut it into 3 cakes.

    Prepare everything you need for the filling.

    Defrost the cherry berries and drain the juice from them. Add a little water and sugar to the juice. Bring to a boil so that the sugar dissolves, and then cool. This will be an impregnation for cakes.

    For the cream, combine the fat sour cream with powdered sugar and whisk into a fluffy cream. The fatter the sour cream, the thicker and more stable the cream will be. Take sour cream with a fat content of at least 25%. To stabilize the cream, you can use a thickener for cream or sour cream.

    Soak the cakes with cherry impregnation, smear with cream, forming small sides and lay out the cherry berries.

    So assemble the cake. Leave it for 6-8 hours to soak and freeze. Sprinkle the frozen cake with grated chocolate.
