Step 1:
How to make pizza with pear and gorgonzola like in a pizzeria? Very simple. First, prepare the necessary ingredients according to the list. Take the flour of the highest grade. Oil - any vegetable. I have olive oil.
Step 2:
In warm water, heated to a temperature of 37-40 °C dissolve the salt and yeast. Leave for 10-15 minutes in the heat until a fluffy cap appears. If the cap appears, then the yeast is active and you can work with them further.
Step 3:
Sift flour into a bowl and make a recess.
Step 4:
Pour the yeast mixture and olive oil into the flour.
Step 5:
Knead a smooth homogeneous elastic dough. If necessary, you can add a little more flour, but do not rush to score the dough with flour, otherwise it will turn out to be rubbery, hard and tasteless.
Step 6:
Cover the dough with a towel and leave it warm to rise for 1 hour. After 30 minutes after the start of lifting, knead the dough and leave it to rise further.
Step 7:
Now prepare the filling. It's enough for two pizzas. You can not add mozzarella at all. You can use mozzarella for pizza or regular pickle. Pine nuts can be replaced with other nuts to taste. Honey is better to use liquid. If the honey is candied, pre-melt it. Wash and dry the arugula.
Step 8:
Cut the mozzarella into thin slices.

Grate the parmesan on a fine grater. I used already grated store cheese.
Step 10:
Break the Gorgonzola into small pieces with your hands.
Step 11:
Wash the pear, cut it in half lengthwise and remove the core. Cut each half into slices. Pears should not be very hard, so that they have time to bake. The skin of the fruit can be cut off if desired. It is better to prepare pears in advance so that they do not darken.
Step 12:
Divide the finished dough in half. It's enough for two large pizzas. Roll out each part on floured parchment into a circle with a diameter of 28-30 cm .
Step 13:
Transfer the parchment with the dough to a baking sheet. Brush the dough with olive oil on top. Spread the mozzarella slices on top.
Step 14:
Place slices of pears on the mozzarella.
Step 15:
Next, scatter the gorgonzolla slices and sprinkle the pizza with grated parmesan and pine nuts. Similarly, form a second pizza. If you only need one pizza, take only half of all the ingredients.
Step 16:
Bake the pizzas in a preheated 220 °C oven for 20-25 minutes. The exact time depends on your oven. It is important to make sure that the bottom of the pizza does not burn.
Step 17:
Remove the finished pizza from the oven, immediately pour liquid honey and sprinkle with arugula. Bon appetit!
