Step 1:
To prepare dumplings with potatoes and mushrooms, take the products according to the list: for the dough - flour, boiled cooled water and egg, for the filling - any mushrooms (I have honey mushrooms), potatoes, onions and butter.
Step 2:
Knead soft dough from dough products, add salt to the mass.
Step 3:
While you are doing the filling, put the dough in a plastic bag so that it rests, all the ingredients come into interaction with each other.
Step 4:
Heat the oil in a frying pan and lightly fry the onion. cut into small cubes and add mushrooms. Moreover, mushrooms can be either fresh (or frozen), or salted or pickled. In each case, the taste of dumplings will be slightly different.
Step 5:
Boil potatoes in salted water and mash.
Step 6:
Add the mushrooms fried with onions, mix.
Step 7:
Roll out the dough into a thin layer and cut out circles with a glass.
Step 8:
Stuff the dumplings, cover with a pigtail. if it turns out to be a lot for you, send part of it to the freezer and cook as needed.
Step 9:
Boil the required amount of dumplings with potatoes and mushrooms in boiling salted water for 5 minutes from the moment of boiling (5 minutes after dropping them into boiling water).
Step 10:
Ready-made dumplings with potatoes and mushrooms are served hot with butter or sour cream, sprinkled with fresh herbs. Bon appetit!

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
Instead of fresh, you can take frozen or dried mushrooms (dried ones will need 5-6 times less than fresh ones). Frozen mushrooms can be defrosted in any convenient way (for example, in the microwave in the appropriate mode - see the instructions for your technique) and drain the liquid. Or, if the amount of liquid in the recipe is not critical, use without defrosting. Dried mushrooms should be washed well, since they are not washed before drying, and then soaked in cold water for at least 2-3 hours.
