Cooking method
1. Puff pastry should be removed from the freezer in advance so that it thaws at room temperature to a soft and plastic state.
2. Turn on the oven at 200 degrees Celsius for preheating.
3. Rinse the raisins thoroughly with hot boiled water and drain the water. Then pour the washed raisins with a small amount of rum (you can replace it with other alcohol if desired or do without it). Add vanilla extract and zest to the mixture with dried fruits for a pleasant aroma. Leave the raisins to infuse for 10-15 minutes.
4. In a bowl with a hand whisk, beat the chicken egg to a fluffy foam.
5. Mash the cottage cheese with a fork until smooth, breaking all possible lumps. Then mix the cottage cheese with the beaten egg. Add sugar and salt for a balanced taste. Mix all the ingredients together.
6. Combine the curd mass with a tincture of raisins. And mix again until smooth.
7. Cut a sheet of puff pastry into equal squares using kitchen scissors or a sharp knife. Put the cottage cheese filling in the middle of the square. Cover the top with a second square of dough and make pinches along the edges with a table fork. You can twist the filling into envelopes or in any convenient way. The main thing is to tightly fasten the edges of the dough so that the curd filling does not come out during the baking of buns.
8. Put baking paper on a baking sheet and put the formed buns on it.
9. Break another chicken egg and mix it. And then grease the tops of the buns with egg to get a glossy, appetizing crust.
10. Put the buns to bake in a preheated oven for 18-20 minutes until fully cooked, or until the buns are covered with a golden crust.
Ready-made puff buns with cottage cheese filling cool slightly and sprinkle with powdered sugar before serving.
