Berlin Cookies

Cooking method

Cooking time: 4 h 30 min

1. Sift the flour together with baking powder onto the work surface.

2. We make a small recess with our hand, put the cottage cheese in it. Starting from the middle, knead the dough.

3. We roll out the resulting mass slightly, spread the pre-softened butter on the layer, assemble the dough into a ball and continue kneading.

4. And now we roll out the dough into a rectangular layer, after generously sprinkling the work surface with sugar.

5. Fold the rectangle twice, roll it out. Repeat the folding and rolling procedure twice.

6. The rolled out layer of dough is covered with cling film and rolled into a roll so that the film is inside. We send the roll to the refrigerator for 3 hours.

7. After the specified time, we unfold the roll, remove the food film, outline approximately the middle and fold the opposite short sides of the roll to each other.

8. Cut the resulting structure into pieces, place them on a baking sheet previously lined with parchment.

9. Leave the cookies on the baking sheet for about 15 minutes, then send them to the oven preheated to 220 degrees. Bake for 10 minutes.

10. Meanwhile, squeeze the juice out of the lemons, combine it with powdered sugar, mix. We cover the hot cookies with the resulting glaze and let it cool down.
