Buckwheat with Mushrooms
A wonderful, nourishing everyday dish! The best thing about buckwheat with mushrooms is how quickly it comes together. In about half an hour, with very little effort, you've got a satisfying main dish or a great side. You can also take yesterday's (or this morning's) leftover buckwheat, stir in a quick mushroom saute, and turn it into a whole new dish.

Step 1:
To make buckwheat with mushrooms, you'll need these ingredients: buckwheat groats, mushrooms, carrot, a little vegetable oil, some fresh herbs, plus salt and spices to taste.

Get the buckwheat going right away: rinse it thoroughly, put it in a pot, add the water, and add a little salt. For extra flavor, you can also add a small pinch of sugar and 1 tablespoon of clarified butter. Bring it to a boil, lower the heat to a minimum, and cook for 15 to 20 minutes.

Step 3:
While the buckwheat cooks, use the time to make a light saute of carrot and mushrooms. Rinse the mushrooms well and trim away any questionable, dirty, or dark spots with a knife. Slice them however you like, into planks or cubes. Wash, peel, and finely dice the carrot.

Step 4:
Heat the oil in a skillet and warm your spices in it. Add the mushrooms and carrot and saute everything together until lightly browned, stirring now and then. Stir in the rinsed, finely chopped fresh herbs at the end.

Step 5:
Add all or part of the cooked buckwheat to the mushroom saute. Here I added just half the buckwheat so there would be more mushrooms in the finished dish.
- Spices that work beautifully here include ground black pepper, curry powder, turmeric, bay leaf, asafoetida, and definitely try a pinch of Italian (or Provencal) herbs. You can vary buckwheat with mushrooms by adding sweet bell pepper, onion, or a little fresh farmer's cheese while the mushrooms saute.
