Garlic Scape Sandwich Spread
A savory, zesty sandwich spread in a couple of minutes! A holiday table looks much richer with a plate of sandwiches topped with a vibrant spread, and dinner tastes better when a hot meat dish is rounded out with a sandwich and a zesty spread. There are a huge number of sandwich spread options. Some require lengthy prep - cooking or frying the ingredients - while others don't, which makes them far simpler to prepare, yet tasty and interesting in their own way.

Step 1:
This simple dish needs a minimum of ingredients: garlic scapes, cream cheese, and salt. One of them, though, is seasonal - the garlic scapes - and you'll hardly find them in the store. But in summer you can stock up on them by grinding them in a food processor and freezing them. That way you don't have to deny yourself this healthy dish in winter. Garlic cloves, unfortunately, won't work as a substitute for scapes, in either taste or color.

If the scapes are whole, rinse them under running water and grind them in a meat grinder or process them in a food processor. If you're using already-frozen ground scapes, all that's left is to combine them with the cream cheese, add salt to taste, and mix thoroughly. Spoon the resulting mixture into a glass jar and put it in the fridge overnight. It'll firm up, meld nicely, and lose its excess bitterness.

Step 3:
If you like, you can replace the cream cheese with farmer's cheese mixed with cream - the flavor will be different, milder and less sharp. You can serve this spread simply with rye or wheat bread alongside a main dish or soup, or with a flatbread. Or you can build sandwiches with sausage or ham and this garlic spread: spread it on the bread and top it with, say, a slice of meat and cheese. It comes out very zesty, fragrant, and delicious.
