Step-by-step cooking
Step 1:
Prepare the ingredients. Puff pastry is suitable for both yeast and yeast-free. Remove the frozen dough plates from the package and leave them for a few minutes at room temperature, then separate the plates from each other and leave for another 1.5 hours to defrost.
Step 2:
Prepare the apple filling. Take juicy apples, sour = sweet. Wash them, dry them and cut them into small cubes. Transfer to a bowl, add 1 tbsp sugar (or sweetener) and cinnamon. Mix it up. White ordinary sugar can be replaced with cane sugar, the taste and aroma of baking will acquire caramel notes.
Step 3:
Both fresh and frozen cherries are suitable for cherry filling, as long as it is seedless. Put the frozen fruits in a colander and let the juice formed from defrosting drain. Fresh cherries should also be squeezed from the juice. Put the fruit in a bowl, add corn or potato starch and the remaining sugar. Mix it up.
Step 4:
Roll out the dough into a thin layer (2-3 mm thick). Using the heart notch (if there is no such thing, take an ordinary glass), cut out the hearts.
Step 5:
To prevent the baking from burning, cover the baking sheet with oiled parchment paper. Place half of the hearts at some distance from each other so that they do not stick to each other when baking. Put the skewers on the hearts (I have slightly shortened the skewers for convenience), lightly press them into the dough.
Step 6:
Put the filling on the hearts.
Step 7:
Cover the top with the second half of the hearts, walk along the edges with a fork, pinching the edges tightly so that the filling does not leak out.
Step 8:
In a small container, lightly beat the egg with a fork. Using a cooking brush, lubricate the surface of the pies.
Step 9:
Bake for about 15-20 minutes in a preheated 180 degree oven (10-20 minutes before cooking). The finished pies will have a golden crust, take them out of the oven and be sure to let them cool down a little for an even distribution of moisture. If desired, sprinkle powdered sugar on top. Serve with tea or coffee. Enjoy your meal!
When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the mold (or baking sheet) can be taken out of the oven.
Instead of sugar, you can use a sweetener that is not afraid of heat treatment.
