The basis of this wonderful cake is three cakes with various fillers. They are the ones who set the tone for the whole dessert, and you can decorate the finished cake as you like - with sponge crumbs, ganache, tighten with mastic, make roses from butter cream or cover the cake with caramel. Here the imagination of the pastry chef is not limited by anything - it all depends on personal preferences.
So, we divide the sifted wheat flour, granulated sugar and sour cream into three equal parts. And bake the cakes in three stages, do not forget to turn on the oven to warm up to 180 degrees:
1. In a bowl, break the chicken egg, add one third of the sugar and beat the mixture with a mixer until fluffy foam. To the mixture, add one third of corn starch, flour and soda, as well as sour cream. Mix everything together. Half of the walnuts are washed, dried with a paper towel, finely chopped and poured to the dough. We lubricate the baking dish with a small amount of vegetable oil, cover it with baking paper and pour out the resulting dough. Put the mold in the oven and bake the cake for 20 minutes. After that, we remove the mold from the oven, wait 5-10 minutes, take out the cake and let it cool on the grill.
2. At this time, I wash the poppy, put it in a bowl, pour boiling water for just a minute. After draining the water and again pour the seeds with boiling water for a minute, then drain the water, and squeeze the poppy slightly from excess moisture. In a bowl, break the second egg, add the second third of sugar, beat until fluffy. Add flour, corn starch, baking soda, sour cream again. Mix the mixture, and then spread the poppy seeds into the resulting dough. Stir again and pour the dough into the prepared (greased with vegetable oil and covered with baking paper) form. Bake also for 20 minutes, and then cool on the grill.
3. We wash the dried apricots under running water, then soak it in boiling water for 10 minutes, and then drain the water, rinse the dried apricots with boiled water and dry them with paper towels. In a bowl, break the third egg and beat it with a mixer with the remaining sugar. Next, add the remaining flour, corn starch, soda, sour cream. Mix and put the chopped dried apricots into the dough, stir again. Spread the dough into the prepared form and bake again for 20 minutes, and then cool the cake on the grill.
The cakes are ready! So different, fragrant and mouthwatering-tempting. But you need to resist and not try, though ... :) Cut the cakes so that they are even at the edges with a sharp knife. And you can try pruning! Or leave it to decorate the finished cake.
Cooking cream! To do this, pour condensed milk into the bowl of the mixer, add softened butter to it. Whisk everything together until fluffy. Now you can collect the cake. At the very bottom we put a cake with walnuts, on it - with poppy seeds, and on top - with dried apricots. We coat each cake generously with cream, and then we coat the cake on the sides and on top.
The cake is ready! It remains to decorate it, and then put it in the refrigerator for a couple of hours.
