Step 1:
Prepare the necessary products for making the dough.
Step 2:
Butter needs to be melted, combined with warm milk. The temperature of the mixture should be about 40 degrees.
Step 3:
Put 1 tablespoon of sugar and yeast in warm milk and butter. Leave for 10 minutes in a warm place.
Step 4:
Combine flour, remaining sugar, cinnamon and vanilla sugar in a large bowl. mix it up.
Step 5:
Yeast after 10 minutes noticeably "revived".
Step 6:
Combine both mixtures - flour and milk.
Step 7:
Knead the soft springy dough and knead it for 10 minutes. The dough will be saturated with oxygen and will not stick to your hands. You do not need to add flour, so as not to "score" the dough. We leave it for 1.5 hours in a warm place to approach.
Step 8:
The finished dough is crumpled, rolled into a layer of about 35 by 45 cm. Lubricate with soft butter for the filling (at the same time, you can lubricate the baking dish). Sprinkle over the butter with a mixture of sugar and cinnamon for the filling.
Step 9:
Roll the dough into a roll and cut into 10-12 pieces. We put it in a greased baking dish (or we just put it on a baking sheet, like buns, but this way they can "unwind"). We give it another 30 minutes to come up. Then we put the snails in a preheated 180 degree oven and bake for about 30-45 minutes, depending on the characteristics of the oven.
Step 10:
Ready-made snails need to be taken out, cooled and decorated to your taste. The baking dish should still be 2 times larger in volume than the dough, because the snails fit well in the proofing and baking process.
