Cooking method
1. Put almond flour, crushed garlic, and salt in the blender bowl.
2. Pour in lemon juice, olive oil, soy milk.
3. Whisk everything together until smooth.
4. Spread a large piece of food wrap on the work surface, lubricate it with a small amount of olive oil.
5. Put the resulting mass from the blender bowl on the film, tighten on top and press down slightly to give the future cheese a rounded shape.
6. Cover the baking sheet with baking parchment, lay out the future cheese from the film with a smooth and beautiful side up.
7. Put in a preheated oven to 120 degrees for 25 minutes (you may need more time - the cheese should change color slightly, dry and crack on all sides).
8. Let the cheese cool completely, pour it lightly with olive oil, serve with fresh and fragrant herbs.
