Step 1:
We make a biscuit first. Beat eggs well with white sugar. Add flour and almond flour (you can ground almonds). Mix everything with a spatula.
Step 2:
Pour the dough on a half sheet. I have a silicone mat. We calculate the size according to your final shape. I have a Boucher uniform measuring 25 by 9 cm. So I poured the dough measuring 22 by 30 cm.
Step 3:
Bake for 15 minutes at 160g. We take out the finished biscuit and let it cool down. Then we cut off the shape we need.
Step 4:
Making mousse. Fill the gelatin with cold water. We put milk with sugar and chocolate on the fire. Let's let the chocolate melt.
Step 5:
Add the pressed gelatin immediately. If you have loose gelatin, then fill it with water, about 30 ml, and then dissolve it in a water bath or in a microwave.
Step 6:
Add liquor or syrup. What you will have and what you like to taste.
Step 7:
Add cream cheese. I have Philadelphia. Stir with a whisk or mixer.
Step 8:
Whisk cream and add to our mass.
Step 9:
We take the form of a Boucher, put our biscuit on the bottom.
Step 10:
Pour out our mousse.
Step 11:
That's the way we'll have.
Step 12:
We lay out the bottom from the scraps of the biscuit. And put it in the freezer, preferably overnight. At least 6 hours.
Step 13:
We get it in the morning. This is the cake we will already have. We make protein custard. I think everyone already knows how to do it. So, whisk the proteins at the same time and put sugar and water on the fire. Bring to a boil and boil the syrup to 122 degrees. Then pour our syrup in a thin stream into the proteins. Beat for 5 minutes.
Step 14:
We put the cream in the cooking bag and decorate the cake.
Step 15:
I decorated it that way. Our cake is ready. We put it in the refrigerator for 3-4 hours. But I also burned it with a burner. You can leave it like that if you want.
