Mannik from childhood

The same - delicious, lush mannikin from childhood! For everyone, mannik evokes certain memories. But most often, that his grandmother cooked it deliciously! I found another time when relatives in the village had Russian stoves. Oh, what delicious things they cooked in them! No one today's super-duper oven, much less a slow cooker, and even more so, a microwave, will cook as delicious as a Russian oven. The food in the oven languished for a long time, the pastries were baked, and what a crust she had!!!! Mannikin in the Russian oven is a masterpiece! There are many recipes for making mannikin. I tried, not all successful. In many there is a specific taste of poorly boiled semolina. Brrrr! That's why kids don't like semolina porridge! Most of all, I liked the recipe of a familiar girl, how her grandmother cooked. Many are very surprised by the name, because semolina absolutely does not taste in the prepared pastries according to this recipe. The main thing in this recipe is to let the baking mass infuse / swell. And if someone in your family does not like semolina porridge, do not tell them about the composition of the dish, and they will eat with pleasure! I will share this recipe with you.

Cooking mannik is very simple and does not require special skills. Any young housewife can cope.
Put all the measured products in a bowl, except soda, and mix well with a spoon: semolina, sugar, sour cream, eggs, salt.
Cover the resulting mixture with a napkin and leave it for at least 2 hours so that the semolina swells. This is the main moment in the preparation of a delicious mannikin.
After 2 hours, add soda, slaked with vinegar, mix the mixture.
A silicone cupcake mold is very suitable for baking mannikin. The finished cupcake is taken out for one or two.
Grease the mold with oil and sprinkle with a pinch of dry semolina.
Then pour the dough into it and put it in a preheated 180 degree oven.
Bake for about 30 minutes or until tender. I write about the time, because everyone has different ovens. Very beautiful pastries are obtained in ovens with convection. The crust is shiny, golden!
We check the readiness with a special probe to determine the readiness of baking or with an ordinary wooden skewer. Of course, it should stay dry.
We take the mold out of the oven and carefully turn it onto a dish!
Cut into portions and invite the family to the table.

I posted another photo of mannik cooked in portion silicone molds. This is very attractive to children. It's a pity, the giraffe I have a little overstayed in the oven.
