Pizza Calzone with smoked sausages and mushrooms

Italian classics on your table! Simple, fast and delicious. Calzone in Italian means "pants". This is a closed pizza made of thin dough with a lot of filling. Such pizza is often baked in the central and southern regions of Italy. The filling for calzone can be any, even sweet. Traditionally, everything that was found in the household was put in it. The most important thing is not to forget about cheese!

Step-by-step cooking

Cooking time: 1 h 30 min
  1. Step 1:

    Step 1.

    Set of products.

  2. Step 2:

    Step 2.

Chop the basil and put it in the sauce. Mix and set aside-let it infuse. Let's do the test. Pour warm water into a bowl, put salt, sugar and yeast.

  3. Step 3:

    Step 3.

    Mix. Then add flour.

  4. Step 4:

    Step 4.

Knead the dough first with a spoon, then with your hands. In the middle of mixing, pour in olive oil. No eggs, no milk and kefir!

  5. Step 5:

    Step 5.

You can knead the dough in a bowl, you can on the table. Do not get carried away with flour, otherwise the dough will clog and be hard. I have exactly 250 g of flour gone. Here is the dough turned out. We put it in a bowl, cover it with a damp cloth and put it in a warm place for an hour.

  6. Step 6:

    Step 6.

In the meantime, let's do the stuffing. Mushrooms are crushed and lightly fried in oil. Mushrooms and oyster mushrooms I never wash, just wipe with a damp cloth. Then they turn out to be fried, not stewed.

  7. Step 7:

    Step 7.

    Sausage cut into piglets.

  8. Step 8:

    Step 8.

    Olives into several pieces.

  9. Step 9:

    Step 9.

    Grate cheese.

  10. Step 10:

    Step 10.

Peel tomatoes and cut into slices.

  11. Step 11:

    Step 11.

Our dough has come up and wants to get out!

  12. Step 12:

    Step 12.

Turn on the oven to the maximum (I have 220 degrees). We take the dough out of the bowl, divide it into two parts. Each part is kneaded and rolled into a thin circle.

  13. Step 13:

    Step 13.

Grease one half of the circle with a thin layer of sauce.

  14. Step 14:

    Step 14.

Then lay the filling in layers, starting with the sausages.

  15. Step 15:

    Step 15.

    Mushrooms

  16. Step 16:

    Step 16.

    Olives and tomatoes.

  17. Step 17:

    Step 17.

    Sprinkle with cheese.

  18. Step 18:

    Step 18.

We press the filling well, cover it with the second half of the dough and carefully pinch it with a pigtail so that our sauce does not leak out and all remains inside.

  19. Step 19:

    Step 19.

We put our pants on a baking sheet (I have a baking sheet), make several incisions.

  20. Step 20:

    Step 20.

Grease the top with sauce and put the baking sheet in a heated oven.

  21. Step 21:

    Step 21.

There is no need to unpack the pizza! This is another difference from the Russian pie. Bake for about 20 minutes until the edges begin to turn golden. The most important thing is not to drown at this time from the mind-blowing smell! :)) It does the same with the second half of the test.

  22. Step 22:

    Step 22.

We spread our creation on a large beautiful dish.

  23. Step 23:

    Step 23.

Cut into portions and treat everyone at home to white wine and Italian songs! Have a good baking and bon appetit! P.S. If you have a large oven, you can bake both pizzas at the same time.
