Cooking method
To prepare the dough:
1. Mix flour, baking powder, citric acid and sugar in a deep container or just on the table (I did it without it).
2. Make a recess in the resulting mixture and add the yolks and submerged pieces of butter (NOT liquid).
3. Knead until a homogeneous, tight mass is obtained.
4. Put the dough in the refrigerator for 1-2 hours.
5. Roll out the dough 1 centimeter thick and give the cookies the desired shape.
6. Bake until golden brown at 180 degrees (about 15 minutes).
For cooking icing:
1. Beat the egg white to a thick, stable foam.
2. Gradually add powdered sugar to it and beat until the mass becomes thick.
Decorate the cooled cookies with icing. You can use a silicone brush, but of course, a pastry syringe or bag is more convenient.
Bon appetit!
