Spinach cake

This cake took first place at the competition in Portoguaro Venice. Any festive table will be decorated with such an elegant cake, easy to prepare and without expensive ingredients.

Cooking method

Cooking time: 1 h 30 min
Beat eggs to a fluffy foam with sugar, add boiled and squeezed spinach (you can use freezing), stir until smooth. Combine flour and semolina with baking powder, add egg-spinach mass, lemon zest, stir, gradually add vegetable oil.
Put the dough in a detachable mold lined with baking paper. Bake at 180 g for about 1 hour (until a dry splinter)
Cool the cake, trim the top, making the cake smooth and flat (these pieces will go to sprinkling).
Beat the heavy cream with powdered sugar to steady peaks (do not interrupt, otherwise you will get butter), add 150 grams of Philadelphia-type cottage cheese.
Cut the cake lengthwise into 2 cakes, layer with cream, sprinkle with crumbs from the cake and decorate to your taste.
