Crumbly dough and tender filling, what could be better? When I first saw the recipe for this biscuit, I immediately decided that I would definitely cook it! And I was not mistaken, the biscuit turned out very, very tasty. The dough turns out to be very tender and crumbly, and the filling is just weightless, cherries with their sourness also fit well here, but I think if there are no cherries, then currants, raspberries or strawberries will do. The biscuit turns out to be moderately sweet, so if you have a sweet tooth, then put more sugar in the filling. Help yourself!

    Pour the sifted flour into the bowl of the combine, add the diced cold butter. Grind into crumbs.

    In warm milk, we dilute yeast with sugar (1 tbsp. l.).

    Add egg, milk with yeast and a pinch of salt to the bowl to the butter crumbs.

    Knead a bun of dough (if the dough does not want to gather into a bun, add 1 tbsp. l. of warm milk until the dough comes together).

    Round up the dough, put it in a bag and send it to the refrigerator for 1-2 hours.

    Rub the cottage cheese through a sieve, add egg yolk, sugar (if you have a sweet tooth, the amount of sugar can be increased), vanilla tincture (or vanilla sugar) and sour cream. Mix everything thoroughly.

    If your cottage cheese is wet, then add 1 tsp. (with a slide) potato starch, mix.

    Beat the egg white into a strong foam and add it to the curd filling, mix gently.

    Take out the dough from the refrigerator. We spread it on parchment (so it will be easier for us to transfer the finished biscuit to a baking sheet or form it immediately on a baking sheet).

    Roll out the dough into a circle with a diameter of 35-40 cm. Spread the curd filling on top, not reaching the edge of about 5 cm. Spread frozen cherries on top of the cottage cheese, having previously rolled in flour.

    Bake the biscuit in a preheated 180 C oven for about 30-35 minutes, until golden brown. Let the biscuits cool, sprinkle with powdered sugar on top and serve to the table.
