Cooking method
First of all, separate the yolks from the proteins, put the latter in the refrigerator. To the yolks add softened butter, half the norm of sugar (60 g) and orange zest. Beat with a mixer until the sugar dissolves.Mix the sifted flour, baking powder and semolina.Without stopping whipping, pour in the dry mixture in 3 steps.Then add the juice from the orange (we do not throw away the crusts), beat everything again and set aside for a while.
Get the proteins out of the refrigerator, pour a pinch of salt into them and beat to a light foam. Then gradually adding the remaining half of the sugar (60 g), beat to peaks.Gently introduce the proteins into the butter dough.
You can bake in a slow cooker on the "BAKING" mode for 45 minutes, or you can also bake in the oven.
While the pie is baking, prepare the syrup - boil half a liter of water together with 300 grams of sugar and citrus peel, add a stick of cinnamon. After the syrup cools down, pour in 20 ml of cognac (optional).
Pour the syrup on the hot pie and leave for 5 minutes under the lid.
