Knead the dough out of flour, 75 g of sugar, yolk, butter and a pinch of salt. Wrap it in plastic wrap and put it in the refrigerator for 1 hour.
Heat the oven to 180 degrees. Line a greased form with dough. Put baking paper on top, pour the peas. Bake for 15-20 minutes . Remove the peas.
Grind the yolks with two tablespoons of sugar, add condensed milk, juice and lemon zest. Put the mass on the base of the dough and bake for 30 minutes .
Whisk the proteins into a foam with a pinch of salt, starch and the remaining sugar. Put the mass on the filling and put the pie under the grill for 10 minutes .
