So, using a mixer or whisk, beat the eggs white. Rub the lemon zest there and add sugar and butter. Mix everything thoroughly and combine with flour and baking powder. From the resulting mass, we knead a smooth and plastic dough. Then we take a baking sheet, cover it with foil and evenly distribute the dough on it. Put it in the oven and bake at 200 degrees for about 45 minutes. We cool the finished cake and cut out a circle from it. The remaining parts of the cake are chopped into small pieces.
Two thirds of all peaches together with nectar are crushed in a blender. Using a mixer, beat the cream to a thick foam, adding vanilla and starch there. After that, soak the gelatin for 20 minutes. Then we bring it to a boil so that it dissolves, and combine it with peach puree and whipped cream. Add the pieces of sliced cake there and mix everything together.
We put it all in a round shape and leave it to freeze. After 3 hours, the mold with the frozen gelatin mass is lowered into hot water. Then quickly turn it over onto a round cake. Then, in a mixer, whisk the remaining cream with vanilla and grease the cake with them. Decorate with slices of peaches and nuts. The peach cake is ready!
