Cooking method
We start cooking by taking the dough out of the freezer so that it has time to defrost. At this time, you can prepare the filling.
Apples for puffs are best to choose green and hard, sour or sweet and sour. Starchy varieties and too soft will not work. Apples are washed, wiped with a clean dry towel, cut into halves. Cut out the stems and cores, then cut the pulp into small cubes.
We also sort and wash the grapes, dry them with a paper towel.
Turn on the oven to warm up to 180 degrees Celsius. Cover the baking sheet with parchment.
Put the frying pan on medium heat, put the butter in it, wait for it to melt. Then we put sliced apples and grapes in the heated oil, add granulated sugar, finely grated lemon zest, pour lemon juice. Add a stick of cinnamon to the pan. Mix everything, cover the pan with a lid and cook for 5 minutes. The heating is still average.
Next, remove the lid and cook everything together for another 5 minutes, in the process, not forgetting to stir the mixture from time to time. Apples should become soft, but at the same time retain their shape. Remove the pan from the heat, remove the cinnamon stick, and cool the mixture to room temperature.
Spread the dough on the work surface, lightly sprinkled with flour. We roll out each sheet and cut out circles with a diameter of about 12 cm. In principle, the puffs can be of any shape, for example, they can be made rectangular or triangular. In general, this is a matter of personal preference.
So the circles are cut out. In the center of each we place the filling. Break the chicken egg into a bowl and lightly beat with a fork. With a beaten egg, using a cooking brush, we smear the edges of the circles and put them together, pinch them. Seam down, spread the puffs on a covered baking sheet.
The formed puffs are smeared on all sides with beaten egg and sprinkled with granulated sugar on top. We put the baking sheet in the oven that has had time to warm up for 25 minutes. The puffs should become airy, lush and of a beautiful golden color.
