Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to make a mannikin without eggs? Prepare all ingredients. In a bowl, transfer the semolina and pour it with kefir. Mix everything with a spoon. Make sure that no lumps form.

  2. Step 2:

    Step 2.

Leave the semolina mass for 10 minutes. During this time, the semolina will swell and we will get a more or less homogeneous mixture.

  3. Step 3:

    Step 3.

Add sugar, salt, baking powder to the resulting mixture. Mix everything up. If you don't like adding ready-made baking powder to the dough, you can replace it with soda extinguished in vinegar or citric acid.

  4. Step 4:

    Step 4.

Melt butter in the microwave or on the stove and pour it into the dough. Mix it up. Try to stir the dough with neat, even movements so that the hot oil does not splash around.

  5. Step 5:

    Step 5.

Put any fillers in your dough. I chose light raisins and diced dried apricots. To prevent dried fruits from sticking together, roll them in flour. But first wash well, soak with boiling water and then dry. Transfer the dough to a baking dish lined with parchment paper.

  6. Step 6:

    Step 6.

Preheat the oven to 180 degrees. Bake the mannikin for about 30-40 minutes. The time depends only on your oven, calculate it yourself and periodically check the baking.

  7. Step 7:

    Step 7.

Remove the finished mannikin, cool it and cut into serving slices. Serve the pie in this form with tea, coffee. You can add any sweet sauce, syrup, condensed milk to it.

Mannikin on kefir without eggs turns out lush, slightly moist. Baking powder or its alternative must be used. As fillers for mannik, you can take any fruit or dried fruits, berries, nuts, lemon or orange zest.
To enhance the taste of mannikin, you can pour chocolate glaze, fudge or sprinkle with powdered sugar. According to the same recipe, I made it in a slow cooker, it turned out delicious.
