You need to beat softened butter with added sugar into a fluffy foam. Gradually add the raw egg yolk, vanilla and salt to the mixture. Slowly add wheat flour to the mass and quickly knead the dough. It will be a shortbread dough, so you do not need to knead it for a long time. You should get a homogeneous mass, and that's it. Now the dough needs to be rolled out into a layer five millimeters thick. And put this layer in a round shape, smeared with oil. Make a basket out of the dough, and cut off the excess edges.
Put the parchment sheet on the dough and pour the hard peas on top. We put the cake in the oven warmed up for ten minutes. We take out the peas and remove the paper.
How to make cream for a creamy cheesecake: rub the yolk with sugar and butter, put the mixture in a water bath and keep it there until the mass thickens. Transfer the mixture to a blender and whisk together with cream, cheese, a pinch of salt and vanilla. Fill the dough basket with cream and put it in a preheated oven (160 degrees) for 20-30 minutes.
When the cheesecake is ready, it needs to be cooled and covered with any berry jam on top. You can make chocolate icing. Decorate the top of a classic cheesecake with fresh berries or pieces of fruit.
