Honey must be kept at room temperature so that it is not too thick.
Then we take separate bowls – two pieces. In one, beat the honey with a mixer. In the other – chilled egg whites. The proteins should become a stable white foam. Honey will also change color, turn white. When both masses are well beaten, we mix them with each other and whisk them again. It is necessary to make the mixture completely homogeneous.
Now we begin to pour the sifted flour into it in small portions. And we mix the dough, trying to make sure that there are no lumps. At the same time, we add any filler at will – nuts or spices.
Now we put the dough in a greased form (one or more) and bake in a heated oven for about 20 minutes until ready. Preheat the oven to 180 degrees.
Ready-made gingerbread can be coated with icing sugar on top.
