Berry gelatin dessert from frozen berries
Berry gelatin made from frozen berries is pretty and delicious! You can serve this frozen-berry gelatin dessert on ordinary days, and there's a place for it on a party table too. Garnish the set gelatin with fresh berries, fruit, and fragrant mint — it's not only tasty but very pretty.

Step 1:
For berry gelatin from frozen berries, you can use absolutely any frozen berries you've put up for winter or bought at the store. I happened to have black currants, raspberries, cherries, blueberries, and cranberries. Add gelatin, water, and sugar to those, and you're ready to start making this sweet dessert.

First, soak the gelatin according to the package directions (these vary nowadays, so it's best to follow the instructions for yours).

The berries don't need thawing — they'll thaw perfectly as they cook. Cover the frozen berries with water and bring to a boil. Simmer them a bit — most of the vitamins evaporate with heat anyway, so at least the liquid comes out tasty and full-bodied.

Crush the berries with a masher — that way their pulp enriches the resulting compote.

Now strain the crushed berries and their liquid through a sieve, pressing them well with a wooden spatula or pestle — whatever you have.

Pour the syrup back into the pot and add the bloomed gelatin. Stir well until it's completely dissolved and smooth.

Add sugar to taste and warm the mixture through. People usually advise not to boil a gelatin mixture — supposedly it won't set afterward — but on some cooking forum it was shown that boiling dissolved gelatin doesn't affect its setting; what matters is the quality of the gelatin. One thing's for sure: if a gelatin mixture is frozen, it'll turn back to liquid (or broth, or compote, depending on what you made) — you'll just need to bring it back to a boil and let it set again. So no harm done.

Pour the mixture into small dishes or dessert glasses and leave them to cool. Then put them in the refrigerator. The setting time depends on the concentration of the mixture — up to 3 hours.
