Step 1:

Take the unpeeled squid, scald them with boiling water and quickly remove the skin. If you don't like the smell of squid, then additionally sprinkle them with freshly squeezed lemon juice, which is able to remove the specific smell of these seafood. Next, we lower the squid into boiling water for 1-2 minutes so that they just grab the mold. You can't cook longer, otherwise they will become "rubber". You can add lavrushka and peppercorns to the water. We take the carcasses out of the water.

Peel the carrots and three on a coarse grater.

Pour olive oil into the pan (you can replace it with refined vegetable oil if there is no olive oil) and let it warm up over medium heat. Spread the onion and fry it with stirring for 3 minutes. It should become transparent. Pour out the carrots and simmer for another 5 minutes while stirring.

Next, add mushrooms and cabbage to the frying pan with onions and carrots.

Mix all the ingredients and fry until cooked over moderate heat, do not forget to stir. Add salt and ground black pepper to taste. The filling is ready, now you need to let it cool completely.
Step 9:
And now we have come to the step that will tell you how to cook squid stuffed with cheese and mushrooms. At this stage, we fill our squid with stuffing.
Step 10:
We put the stuffed carcasses in a baking dish, lubricate them with sour cream and sprinkle liberally with grated cheese. We send it to the preheated oven for 10 minutes.

Stuffed squid is ready! We serve them to the table, sprinkled with herbs.
