Step 1:
Prepare all the necessary ingredients for making muffins in the microwave. Take the flour of the highest grade. Eggs - C1 or C0. The oil should be odorless. If you plan to use vanilla sugar instead of vanilla, take it 10 times more than the specified amount. Jam will suit any, choose according to your taste. Remove the jam and egg for 1-1.5 from the refrigerator. To make the dough more successful, they must be at room temperature.
Step 2:
Take a deep bowl in which it will be convenient to mix dry and liquid ingredients. Sift half of the flour into it to sift out small debris and the dough is saturated with oxygen. Wash the egg with soap, dry it with a towel or napkin. Whisk it in a separate container with vanilla and a pinch of salt. It is not necessary to beat until the foam appears. Adding salt improves the taste and simplifies the whipping process. Add the beaten egg to the flour.
Step 3:
Add jam (I have apricot) and butter, mix thoroughly. Since the properties of flour of the same grade, but different manufacturers differ, in order to get the desired consistency, add the remaining flour in small portions.
Step 4:
The dough should turn out like thick sour cream. Add baking powder and mix thoroughly.
Step 5:
For cooking, use muffin and cupcake molds that can be used in a microwave oven. If the molds are silicone, they do not need to be lubricated, from another material, lubricate the bottom and sides with oil. Fill them 3/4 full to leave room for the dough to rise. Put in the microwave for 3 minutes at a power of 800 watts. The cooking time may vary depending on the capabilities of your microwave.
Step 6:
Finished muffins will increase in volume by 1.5 times. Pierce them with a wooden toothpick or skewer in several places. If the dough doesn't stick to it, then the muffins are ready.
Muffins turn out to be lush and very tasty. In our family, adults liked them more than children.
You can serve them both warm and cold. Such muffins retain freshness for a day after cooking. However, they are usually prepared in too small a portion and there is no need for long storage.
