Step 1:
Let's start with the eggs. We separate the whites from the yolks. Place the proteins in a deep bowl, add salt and beat well into the foam with a whisk or mixer. For the yolks, we use a small cup - they need to be lightly mixed with a fork.
Step 2:
Pour the yolks into a bowl with the whites and gently mix with a whisk until smooth.
Step 3:
Pour flour sifted through a sieve into a bowl with eggs and knead the dough. It turns out smooth. We form a ball, wrap it in plastic wrap and leave it to rest for 10 minutes.
Step 4:
Roll out the dough with a rolling pin into a thin layer, about 0.5 cm thick .
Step 5:
With a curly knife, carefully cut out the same-sized lozenges. To do this, we cut the layer with a knife diagonally from right to left and vice versa.
Step 6:
Make a small incision at each diamond and thread one tip into it.
Step 7:
Pour oil into the pan and heat it well. Spread out several blanks and fry for 2-3 minutes on each side until golden brown. We remove the finished products from the frying pan and sprinkle them abundantly with powdered sugar while still hot.
