To prepare salted salmon according to this recipe, we need 1 kilogram of fish, if there is no salmon on the market, then you can replace it with pink salmon or trout. If you choose between trout and salmon, it is better to take the second, since salmon is fatter, and, accordingly, it will taste better. Moreover, you can use any part of the salmon for salting. Frozen fish should preferably be thawed in the refrigerator. Then we wash the fish and spread it along the ridge. It turns out two equal parts, after that we remove the bones and the spine. We get salmon fillets. Mix the sugar or honey well and roll the fish on one side, then pour the rest of the salt mixture onto a clean cloth and put the fish on it with the salty side up. In this fabric, we tightly swaddle the fish, put it in a bowl and put it in the refrigerator for a few days. The fish will be ready in at least 2 days, but the longer it lasts in the refrigerator, the tastier it will turn out. Every day, 2 times a day, it is necessary to turn the fish over. In addition to salt and sugar, you can add coriander, basil and black pepper. Fish can be served as a separate meal, but also as an addition to various dishes. Bon appetit!
