Step 1:

Soak gelatin in water for 20-25 minutes.
Step 3:
Heat the swollen gelatin over low heat until dissolved (do not boil). Or it can be dissolved in a water bath. Add sweetener and vanilla, mix.
Step 4:
Beat the cooled protein with a mixer into a steep foam.
Step 5:
Whipped whites are gradually added by spoonful to the gelatin mass with continuous whipping. Beat for 2-3 minutes.
Step 6:
A gelatinous mass is obtained. Quickly transfer it to parchment, sprinkled with powdered milk. We form a high rectangle. On top, we also sprinkle with powdered milk through a sieve. We send the future marshmallows to the refrigerator for 1-1.5 hours.
Step 7:
