Avocado Salad with Chicken

This salad turns out hearty, bright, and festive. For the upcoming holidays, I've put together a collection of dishes to dress up the festive table, starting with two interesting salads. Both feature avocado and chicken, but one has tomatoes and the other grapefruit — and each gets a tasty dressing made with fruit juice and olive oil. In my opinion, avocado doesn't go with mayonnaise (though some people use it and enjoy it). So I dress all my avocado salads with anything but mayo.

    How do you make avocado salad with chicken? Gather your ingredients. Wash the lettuce and tear it into small pieces by hand.

    Boil the chicken until cooked through. Cool it and cut it into small slices.

    Peel the onion and slice it into half-rings.

    Cut the tomatoes into wedges.

    Halve the avocado, remove the pit, and peel it. Cut the flesh into small pieces and sprinkle them right away with lime juice so they don't brown.

    Combine the lime juice with the vegetable oil, sugar, and salt. Whisk lightly with a fork and let it sit for 5 minutes so the salt and sugar fully dissolve.

    In a salad bowl, combine the chicken, avocado, tomatoes, onion, and lettuce. Drizzle with the dressing and toss gently.

    Sprinkle the salad with freshly ground black pepper and serve.

  • Choose tomatoes that are juicy but firm. Soft ones don't hold their shape and will fall apart into mush as you cut and toss, ruining the look of the dish.
  • To keep your eyes from stinging while you slice onions, rinse the onion and the knife in cold water. And rub your cutting board with a piece of lemon before slicing so it doesn't pick up the oniony smell.
