I wash and dry the turkey, mix salt with coriander and pepper, and then rub the carcass with this mixture. I wash the apples and peel them from the middle, and then cut them into small cubes. I boil the rice until it is half cooked, and then mix it with apples, small pieces of truffles and chestnuts, madeira, pepper with salt and sugar and cherries, crushed into a homogeneous mass. I put this sweet minced meat tightly inside the turkey, which I sew up with a thread and bake until ready in a preheated oven to 200 C. From the finished Christmas turkey with rice-apple-cherry stuffing stuffed with truffles, chestnuts and madeira, I take out the threads with which I sewed it before baking. I cut the bird itself into portions and serve each guest a piece of turkey and a couple of spoonfuls of stuffing. Usually I prepare it not only for Christmas, but also for the New Year's table. Fresh cucumbers and tomatoes are perfectly combined with Christmas turkey, and parsley with dill will be simply excellent if you sprinkle them on each slice of poultry. Large birds: turkey and goose are the traditional food on the Christmas holiday table of many peoples of the world. This culinary recipe was shared with me by a friend who has been passionate about the Christmas and New Year traditions of Europeans since childhood. Surprisingly, there are dozens, if not hundreds, of Christmas turkey recipes. This is one of those that are not as widely known as turkey with apples or oranges.
