Homemade Herb Cheese
The most delicious homemade herb cheese — you've never had better! This cheese has become an absolute favorite in our house! It's simple and easy to make, and the result will delight you. I made the cheese in a special mold; if you don't have one, just use cheesecloth — put all the ingredients in it, tie the ends, and hang it over a pot or the sink. You can also make this cheese without herbs — it's all up to you.
Cooking method

Step 1:
Gather all the ingredients. For herbs I'm using dill; parsley works too. And if you don't care for them, you can leave the herbs out entirely.

Crack the eggs into a bowl.

Add the sour cream and whisk well.

Pour the milk into a pot, add salt, and bring to a boil.

Then pour the egg-and-sour-cream mixture into the milk in a thin stream, stirring constantly. Keep the heat at medium. Curds will start to separate right away. Stirring, cook the mixture for 5–7 minutes.

Lay a liner in the bottom of the mold.

Then pour the whole mixture into the mold. Set a larger pot underneath — you'll get very tasty whey :)

Add the herbs (if you like) and stir.

Lay another liner on top.

And under a weight for 8 hours. I set it on the windowsill overnight with the window open. If you don't have a mold, just use cheesecloth — put all the ingredients in it, tie the ends, and hang it over a pot or the sink.

And here's the wonderful cheese that comes out. Very tender and delicious, and it slices perfectly. It's wholesome too — you always know exactly what your kids are eating. In our house it disappears in 2–3 days. The taste is excellent. And the whey makes great pancakes!
