Berry Mousse
A light, airy mousse that's pure summer! Its simplicity is part of the charm. Berry mousse is a very tasty dessert that takes hardly any effort — even a beginner can manage it. I recommend giving this elegant treat a try; it just melts in your mouth!

For this recipe, where I'll show you how to make berry mousse, you can use either fresh or frozen berries. To start, gather everything listed in the ingredients: berries, sugar, and semolina. Use any berries you like — you can even mix several kinds.

Before you start cooking, squeeze the juice from fresh berries or drain the liquid from frozen ones.

Put the leftover berry pulp in a small pot.

Cover it with two cups of water, bring to a boil, and strain.

Add granulated sugar to taste and bring the mixture to a boil.

Strain it.

You end up with a berry infusion like this.

Then add the semolina to the infusion and cook over moderate heat, stirring constantly, for 15 minutes.

Cool the finished mixture, then beat it with a mixer or blender.

As you beat it, add the juice you squeezed from the fresh berries.

Beat it. The mixture should turn out very airy and fluffy, like foam.

As you beat it, the mixture grows about 2.5 times in volume.

Spoon the finished mousse into prepared dishes — glass dessert cups work best. You can garnish the berry mousse with berries or fruit on top, along with fresh mint leaves. I ended up with a lovely garnish that makes the dish look even more appetizing and elegant.

- It's especially nice to make this dessert when berries are in season: raspberries, strawberries, red or black currants, blueberries, blackberries, cranberries, and so on. You can pick some in your own garden and find others in the woods or buy them at the market. Different berries come at different times — the season starts in June, when strawberries ripen. All in all, you can make berry mousse from different berries all summer long. Kids especially love this dessert — they adore sweets and bright treats like this.
