Step 1:
Wash the nuts, dry them on paper towels, you can fry a little in a frying pan, so it will be fragrant and tastier. Choose high-quality nuts, without bitterness, the taste of the finished dish will depend on the taste of the nuts. Put the nuts in the bowl of a blender, you can use a meat grinder, but it's more convenient for me with a blender.
Step 2:
Wash the greens, dry them, cut them and send them to the nuts, chop them and transfer the resulting mass to a bowl.
Step 3:
Bring the beetroot to readiness, I baked it in the oven for two hours at 180 degrees, but my beetroot is large, it may take about an hour and a half for the average one. Beets choose juicy, bright, sweet - I have just such. Cool, peel and cut into pieces so that it is convenient to grind in a blender.
Step 4:
Peel the garlic, rinse and add to the bowl of a blender to the beetroot, chop.
Step 5:
Send the chopped beets with garlic to a bowl with nuts and herbs, add wine vinegar, salt and spices, mix, form balls from the resulting mass, flatten them a little on top, decorate with nuts and herbs, or pomegranate seeds, to your taste. Enjoy your meal!

The dish is simply and quickly prepared, it contains only available ingredients, and the result is amazing, I will definitely cook more, there will be something to surprise the guests.
