Step 1:
We will need: butter, honey, sugar, egg, flour. And spices for gingerbread. Sometimes they are sold in a mixture. Or you can take it yourself separately. Cinnamon, cardamom, ginger powder. And mix everything together.
Step 2:
Take a saucepan with a thick bottom. Such dishes keep the temperature well and nothing burns in it. We put honey and sugar. We put it on fire. I usually make a double portion, then store the dough in the refrigerator and use it as needed.
Step 3:
Melt honey and sugar. In the process, we put salt, cinnamon. Stir. We keep it until the sugar dissolves, do not boil it. It will happen quickly.
Step 4:
As soon as the sugar dissolves, add the soda immediately. Stir well. The mass will increase in size, keep this in mind.
Step 5:
And add the butter pieces. At the same time, we constantly stir the mass with a whisk.
Step 6:
Let's keep it on fire for about 2 minutes. You can turn down the fire. I turned it down from 9 to 7. You are looking at your stove, the fire should be medium.
Step 7:
Remove from heat. I pour the honey dough into the bowl of a mixer with high walls. This way it cools down faster. And we need to cool it to room temperature. High walls are needed so as not to smear the work surface with flour.
Step 8:
When the dough cools down, we turn on the mixer and add an egg to the dough, stirring it with a mixer. Whisk at medium speed. I have a nozzle letter K.
Step 9:
Continue to beat and add flour in parts. Our flour is pre-sifted. We make sure that the flour is not scattered.
Step 10:
Add about 400g of flour, plus or minus. Then we spread the dough when it is already difficult to mix. And with the rest of the flour, we already knead the dough with our hands. It is necessary that it does not stick to your hands. But you don't need to add flour anymore. We will score the dough with flour this way.
Step 11:
Now we need to wrap the dough in a film and put it in the refrigerator overnight. You can cut the dough into pieces. And wrap each one. It's so convenient when you're doing a lot of dough. This dough is stored for a long time in the refrigerator, up to 3 months. Ready-made gingerbread from this dough is stored in an airtight container for up to 1 month. You can bake just gingerbread for tea. But you can also fill them with glaze, decorate, make jewelry out of them, etc.
