Dogwood ripens in late summer or early autumn. This happens unevenly -some berries are already ripe, and others are not, so dogwood is always collected in several approaches. Picking ripe berries is very simple. To do this, you need to spread a cloth or film under the tree, then shake the tree thoroughly. All ripe fruits will fall on the spread cloth.
1. We sort out the berries, wash them well and put them in a saucepan with a thick bottom. It is best to use a stainless steel pan, you can also enamel. Berries should be chosen ripe and good, you need to get rid of all the spoiled ones.
2. We cover the prepared berries with sugar, leave them to stand for an hour or two. During this time, the dogwood will give juice.
3. At this time, we sterilize the jars. You can do this in any convenient way, for example, in the oven, putting clean cans upside down in it (on the grill), putting the lids there as well. Then you need to turn on the oven to warm up to 120 degrees. Jars and lids in the oven are sterilized for 15-20 minutes.
4. Pour the specified amount of water into a pan with dogwood and put it on medium heat, bring the liquid to a boil, stirring so that the jam does not burn, does not stick to the bottom. We also remove the formed foam with a slotted spoon.
5. After that, we reduce the heating to a minimum and cook the jam for 5 minutes. In the process, we remove the foam from the surface of the berry mass and do not forget to mix the future delicacy from time to time.
6. We remove the finished jam from the fire and lay it out in pre-prepared sterilized jars, roll up with sterile lids and turn it over, wrap it in a blanket until it cools completely.
The jam is ready! It should be stored in a cool place - in a cellar or refrigerator.
