Cooking method
We sort out the dogwood and wash it, after which we transfer it to an enameled saucepan. Fill with water and put the pan on medium heat. We bring the contents of the pan to a boil, after which we reduce the heating to a minimum. We cook the jam for 15 minutes. In the process, we often mix the berry mass, remove the foam. It is important not to leave the jam unattended so that it does not burn!
When the right time has passed, remove the pan from the heat and let the berry mass cool down. It is not necessary that it cools down completely, the main thing is that you can touch it with your hands. After that, we throw the jam into a mesh colander installed over a suitable-sized container. When the liquid drains, we crumple the berries with a potato masher, choose the bones. The pulp from the bones should easily move away.
Return the strained liquid back to the pan, squeeze the juice into it from the previously well-washed lemon. In the same place, add sugar, cardamom in the form of powder, mix. Put the pan on medium heat, bring its contents to a boil. Cook the jam on medium heat for 5 minutes, stirring constantly.
When the specified time has passed, we reduce the heating to a minimum and pour rose water into the pan. Cook everything together for another 25 minutes. It may take a little more or a little less time - the jam should thicken a little.
Pour the jam into sterile jars, close with sterile lids and let it cool completely at room temperature. After the jam jar can be transferred to a permanent storage location. It is advisable to store them in a cool room.
