Cooking method
We will prepare the dough for pies on kefir, and we will knead it with a food processor. But you can do it with your hands - it's easy and fast. If there is no kefir, it can be replaced with sour cream, but it is better to take low-fat - 10-15%. When using kefir, add butter to the dough, which needs to be melted and cooled. When using sour cream, you can do without butter.
So, pour kefir into the bowl of the combine (spread sour cream). We also break the egg there, pour salt and soda. Also add melted and slightly cooled butter. We mix everything, turn on the low speed. Sift the flour and add parts to the bowl, mix, but not for long - no longer than a minute. The dough turns out to be very soft, a little sticky. If necessary, add a little more flour, but it is important not to score the dough - it should remain soft.
Sprinkle the work surface with flour, spread the dough out of the bowl and knead it with your hands for another 1 minute. It is not necessary for a long time, otherwise it will lose its airiness. After that, the dough is completely ready to form pies with potatoes from it. Do not delay, because if you leave the dough for a long time, the pies will turn out to be stiff and excessively dense. This is exactly the kind of test when pies need to be cooked quickly, as they say, in a hurry.
A total of 16-20 pies are obtained from the specified number of ingredients. We divide the finished dough in half, and then each half in half again. After each quarter of the dough, we form a tourniquet and cut it into 4-5 parts. We roll the pieces into buns, and then, sprinkling with flour, we roll them into round layers and fill them with stuffing.
