1. Break the eggs into a bowl, whisk them until a lush, thick mass is obtained. It is best to use a powerful mixer, it will cope with the task faster and better.

2. Pour sugar into the resulting mass, continue to beat until the crystals completely dissolve. About 5 minutes.

3. Melt the butter to a liquid state. This can be done using a microwave oven or in a water bath. Let the oil cool down a little.

4. Pour the melted butter into the egg mass. It should be warm, the eggs can curdle from the hot oil. Beat for 3-4 minutes until smooth.

5. And now we put cottage cheese in the resulting mass. Cottage cheese can be taken at home or store - no difference. Only one should take into account such a moment: if the cottage cheese is sour, you need to add a little more sugar to taste.

6. Beat the mass until smooth. Then add lemon zest and add flour. We do not introduce the flour all at once, but in parts. Beat it up every time. Baking soda is extinguished with vinegar, poured into the dough. Carefully whisk first at a low speed, and then - at a higher speed. Also add vanilla, quite a bit - a pinch.

7. If necessary, add more flour. Its quantity directly depends on the size of eggs, the fat content of cottage cheese. The dough should eventually be soft, plastic. Also at this stage, you can introduce additives: raisins, candied fruits, nuts and other dried fruits, but this is optional.
