Cooking method
Remove the butter from the refrigerator a couple of hours before making the dough. It should be softened, but not melted to a liquid state.
1. Put the egg yolks in a bowl. Pour water and apple cider vinegar into the same bowl.
2. In the resulting mass, sift flour, add salt, knead the plastic dough. It is quite elastic.
3. Divide the dough into four parts. One of the parts is rolled out in a thin layer, smeared with softened butter.
4. Visually divide the rolled dough layer into three parts. We fold one part of the dough to the center, lubricate it with oil. And we put a third part of the dough on it and also lubricate it. The result is a kind of envelope.
5. Again, visually divide the envelope into three parts already along the dough, repeat the same procedure of folding and oiling. The only difference is that the last folded side is not smeared with oil.
6. We pack the dough in plastic wrap and send it to the refrigerator for half an hour. In the meantime, we are dealing with the remaining parts of the test. They are also rolled out, smeared and folded. And then we send it to the refrigerator.
7. After the specified time, we take out the very first envelope of dough from the refrigerator. Repeat the same procedure of rolling and folding the dough. Do not forget to smear with melted butter.
8. We return the dough to the refrigerator for another half hour. We do the same with the rest of the test. In total, the dough lies in the refrigerator for an hour. It is impregnated with oil, it turns out soft, plastic, elastic.
